As summer winds down, I love to have friends over for a simple, relaxed dinner that’s full of the flavors we’ve been enjoying all season.
A White Negroni is the perfect way to start the evening. It’s light, citrusy, and refreshing—just right for sipping while everyone gathers and dinner is coming together.
For the main course, Bistro Chicken with Potatoes, Olives and Shallots is one of those dishes that makes entertaining easy. The chicken is golden and delicious, the potatoes are tender, and the olives and shallots add just the right amount of flavor. It’s comforting without feeling too heavy.
I also like to make the most of the last of the summer tomatoes. Slice them up, and drizzle with a simple dressing. They really don’t need much when they’re this good.
And of course, there has to be dessert! A Chocolate Pound Cake is always a favorite. A little powdered sugar or a simple chocolate glaze is all it needs.
Add some candles, good music, and a table full of friends, and you have everything you need for a lovely late-summer evening. Nothing fussy, just good food, good drinks, and a little more time together before summer slips away.
