Cucumber and Feta ToastCourse: Appetizers
6 ounces feta cheese
4 teaspoons olive oil
2 teaspoons lemon juice
1 English cucumber, thinly sliced (peeling is optional
salt and pepper to taste
- Slice baguette lengthwise and brush both sides with olive oil. Bake at 400 degrees until crispy around edges. Mash feta, olive oil and lemon juice together with a fork. Spread mixture over the toasted baguette. Top with thinly sliced cucumbers. Season with salt and pepper, drizzle with olive oil and garnish with mint.
