Fish Crudo

Ingredients
8 ounces fresh white fish (rockling, hake, bream, etc.), single piece, ideally even in shape
2 tablespoons lemon juice
1 tablespoon extra-virgin olive oil or a little more, to taste
2 teaspoons lemon zest
¼ teaspoon flaked sea salt
4 mint leaves
2 teaspoons microgreens, for garnish
Directions
- Place the wrapped fish in the freezer for approximately 10 minutes to help it firm up.
- With a sharp knife, thinly slice the fish and place on four plates with the slices slightly overlapping each other.
- Drizzle fish with lemon juice and olive oil. Grate lemon zest evenly over the top and then top with either small mint leaves or torn pieces of larger leaves. Garnish with a few microgreens and serve.
