Our Peachy family gathered for a wonderful soirĂ©e to kick off the holiday season. We shared our favorite holiday appetizers and sides. Today Tamberlyn Dobrowski, our food and entertaining guru, shares with you one of her favorite side dishes to prepare for the holidays…beets with vinaigrette! This holiday season, go outside the box for side dishes. Beets are a tasty and colorful addition!
Beets With Vinaigrette
Course: SidesIngredients
1 1/2 pounds quartered peeled beets
2 tablespoons sliced shallots
1 1/2 tablespoons red wine vinegar
1 tablespoon olive oil
1/2 teaspoon Dijon mustard
Freshly ground pepper
Salt
Directions
- Place beets in cold water and bring to a boil. Simmer until tender, approximately 30 minutes depending on size of beets. Peel and cut into quarters. Combine shallots and remaining ingredients and mix well. Add beets and toss to coat.
