The creaminess of the avocado pairs perfectly with the saltiness of the bacon. Meanwhile, the pistachios, fresh arugula, and light vinaigrette are meant to be together for eternity. Serve it alongside grilled chicken or steak on warm nights when no one wants to be inside.
Arugula, Bacon, Avocado & Pistachio Salad

4 strips thick-sliced bacon, diced
2 cups red grapes, halved
1 bag of arugula
1 avocado, diced
¼ cup roasted salted pistachios
- For the vinaigrette:
¼ cup rice vinegar
3 tablespoons olive oil
1 tablespoon minced shallots
1 teaspoon honey
1 teaspoon Dijon mustard
Salt and pepper, to taste
Directions
- Combine the grapes and arugula in a large bowl.
- Mix vinaigrette ingredients together. Pour the vinaigrette over the grapes and arugula, and toss.
- Garnish with avocado, bacon and pistachios.
