Featured in our Spring 2025 Food + Entertaining article, Connections, this celebration chicken salad is a great dish year-round and works especially well for wedding and baby showers. There is something innately lady-like about chicken salad. Spoon it into sliced croissants, serve it wrapped in large tortillas or lavash, or on a simple bed of lettuce. Any way you choose, it’s delightful.
Celebration Chicken Salad

4 cups poached chicken
1 cup mayonnaise
1 small onion, diced
1 cup celery, diced
2 cups red seedless grapes, sliced
½ teaspoon cinnamon
Salt and pepper, to taste
Directions
- Shred the chicken (or for a smoother texture, use a food processor).
- Mix remaining ingredients together. Add salt and pepper to taste.
- Combine with the chicken until evenly mixed.

- Ruth’s Pro Tip: This recipe can be altered slightly to make a yummy curried chicken salad. Simply subtract the onion, celery and cinnamon and add one healthy tablespoon of curry powder (or more to taste). Finish with a few tablespoons of sliced, toasted almonds.
