Grilled Chicken, Pesto, Arugula, and Mozzarella Sandwiches

Grilled chicken
Pesto (homemade or store-bought fresh)
Fresh mozzarella cheese, sliced
Arugula
Good bread (I like ciabatta)
Directions
- Brush bread with pesto, and layer remaining ingredients.
Notes
- Wrapping sandwiches individually in butcher or parchment paper helps keep fillings in place and makes them easier to hold while eating.
