Ingredients

  • 1 ½ pounds fresh salmon (cleaned and cut into four pieces)

  • 4 cloves garlic, minced

  • 3 tablespoons fresh parsley, finely chopped

  • 3 tablespoons honey Dijon mustard

  • Juice of half a lemon

  • Pinch of salt

  • ⅛ cup olive oil

Directions

  • Preheat oven to 425 degrees. Line a large baking sheet with foil. Place salmon pieces on top of the foil and set aside.
  • In a medium bowl, whisk together garlic, parsley, mustard, lemon juice, salt, and olive oil. Whisk until well-combined. Using a pastry brush, brush the sauce onto the salmon pieces.
  • Bake uncovered for 15–20 minutes Depending on how thick your salmon pieces are, you may need to reduce or increase the time by 2–3 minutes (you can use a meat thermometer to check for internal temperature of 140–150 degrees).
