Spicy Tomato Marinated Feta
Course: Appetizers6-8
Ingredients
½ cup olive oil, plus more as needed
2 garlic cloves, thinly sliced
2 small-ish or one large ripe tomato, coarsely chopped, or pint of cherry tomatoes, halved
Kosher salt and freshly ground black pepper
2 tablespoons harissa paste
1 tablespoon white vinegar
8 ounces feta cheese, sliced into ¼-inch slabs, or ½-inch cubes
Directions
- Heat olive oil in a pan over medium heat. Add sliced garlic cloves and sauté until light golden yellow, roughly two to three minutes. Add tomatoes and cook, stirring occasionally, until they have broken down into a thick, chunky sauce, about six to seven minutes. Stir in harissa paste and continue to cook for a three or four more minutes.
- Remove pan from heat and add a tablespoon of white vinegar. Season with salt and pepper, to taste. Add more olive oil if needed to achieve a spoonable consistency.
- To serve, place the feta in a serving dish or bowl and pour the tomato mixture over. Let sit for at least 10 minutes before serving.
