Honey Lime Chicken and Avocado Rice Stack
Course: MainServings
2-4
Ingredients
- For the chicken:
2 chicken breasts, sliced
2 tablespoons olive oil
2 tablespoons honey
2 tablespoons lime juice
2 cloves garlic, minced
½ teaspoon salt
½ teaspoon black pepper
- For the rice:
1 cup cooked rice
1 tablespoon lime juice
1 teaspoon lime zest
½ teaspoon salt
- For the avocado layer:
1 large avocado, sliced
1 tablespoon lime juice
Pinch of salt
Fresh cilantro, lime wedges, and cracked black pepper, for garnish
Directions
- Prepare the chicken:
- In a bowl, whisk together the honey, lime juice, garlic, salt, and black pepper. Add the sliced chicken and toss to coat evenly. Allow to marinate for at least 15 minutes. Heat the olive oil in a skillet over medium-high heat. Add the chicken and cook for 5–7 minutes, or until golden brown and cooked through. Brush or spoon any remaining marinade over the chicken during cooking for a glossy finish.
- Prepare the rice:
- In a bowl, combine the cooked rice, lime juice, lime zest, and salt. Mix well and set aside.
- Prepare the avocado:
- Gently toss the avocado slices with the lime juice and a pinch of salt.
- Assemble the stack:
- Place the lime rice on a serving plate or bowl as the base. You can also use a round mold. Layer the avocado slices over the rice. Top with the honey lime chicken. Drizzle any remaining sauce over the stack. Sprinkle stack with fresh cilantro and cracked black pepper. Serve immediately with lime wedges on the side.
Notes
- For extra flavor, grill the chicken instead of pan-searing, and add a spoonful of pico de gallo or diced mango on top.
- I like to double the marinade and save half for serving. Separate before marinating the chicken.
