The final part in our three-part series about getting fit for summer features a fantastic on-the-go workout from Jen Eddins of Y2 Yoga along with some great summer recipes to share with friends.
Summer is just around the corner and soon the kids will be out of school and the season of long days outside, cookouts and vacations will begin. It can be easy to get out of your regular diet and exercise routine this time of year so today I’m sharing a workout you can take with you anywhere along with three healthier side dishes that you can bring to summer cookouts, picnics and parties.
Bodyweight and Bench Workout
All you need for this workout is your own bodyweight and a bench! It’s the perfect workout to squeeze in at the park or to do while traveling. This video takes you through the workout and demonstrates the exercises.
Here’s the breakdown:
10 air squats
10 jump squats
10 push up (hands on bench, feet on the ground)
10 step ups onto the bench (10 on each leg, alternating)
10 tricep dips
You’ll repeat this circuit for 3 to 5 rounds, depending on how much time you have an how much you want to sweat!

Roasted Sweet Potato Salad with Chili Garlic Vinaigrette
If you love sweet potatoes like me, this is a summer picnic or barbecue must! It’s a new spin on the traditional potato salad and is also gluten-free and Paleo!

Mediterranean Lentil and Couscous Salad
This dish is easy to prep ahead of time and features a mix of lentils and couscous with lots of Mediterranean-inspired ingredients like feta, arugula, kalamata olives, basil, mint and tomatoes.

Shrimp, Asparagus and Avocado Salad
I’m always looking for new twists on salads to keep them fresh and interesting. I love that this salad doesn’t include any lettuce, just lots of veggies, healthy fat from avocados and a punch of lean protein from the shrimp. It’s finished off with a light lemon dijon vinaigrette.
